Food, Accidentally Vegetarian

It’s a snow day, and I needed my own kind of comfort food. Comfort as in what do I have in this house that I can cook because I cant leave! So I found one large yellow onion, three roma tomatoes, minced garlic, white beans and got to work. What came of it was actually really delicious.

Ingredients:
-white beans
-1 large yellow onion
-3 tomatoes
-olive oil
-1 clove of garlic
-cayenne pepper
-basil leaves
-ground cumin

Directions:
1.I boiled my beans for almost an hour. My mom says you can actually soak the beans the night before, and that can save time but this was the longest part. (pretty effortless) I added ground cumin, basil leaves, and olive oil to the water as well.

2. About 20 minutes before my beans were finished boiling, I started cutting the onions, tomatoes, and garlic. I put about 2 tablespoons of olive oil in a pan and cut the yellow onion the long way. Let them simmer alone for about 7-10 minutes or until brown. Cut the tomatoes however you’d like, and mince one clove of garlic. Let that simmer for about 5 more minutes with the onions that have already browned.

3. Drain your beans. I sprinkled an Eritrean seasoning (bebere) on top of my beans, a common alternative you might have in your pantry is Cayenne pepper. It gives the beans a kick! Then, put my onions and tomatoes on top. Very simple and tasted great.
