We’re all avocado lovers, and every so often, all the good things in the world align, and you see that your favorite produce goes on sale. If the temptation arises to buy as many as you can fit in a bag (or two), don’t combat those impulses. Buy the avocados. I will be here to solve the plethora of avocados that have become your first world problem of the day.
Aldi’s recently had avocados for 50 cents each and I went ham! In about a week, they all ripened and I didn’t want to eat them all at once, so I made a creamy avocado based pasta sauce and the second best part is it took me about fifteen minutes. The ingredients are simple, and it’s a vegetarian dish if you’re having guests over or you follow that lifestyle. If avocados are on sale, don’t fret, and remember this recipe!
Here’s the recipe:
Ingredients:
- 1.5 box of noodles
- 2.5 avocados
- 1/2 bunch chopped cilantro
- 1/2 bunch of chopped parsley
- 3 diced shallots
- 1/4 cup of olive oil
- 1 freshly squeezed lemon
- 1 cup of boiling water (from the pasta)
Directions:
Boil a pot of salted water. Once water has started boiling, put the noodles in the water for about 8 minutes or until it’s boiled as you prefer. As the pasta is cooking, mix the remaining ingredients together in a blender or food processor. Reserve 1 cup of your boiled water and add to the mixture. Blend until it’s creamy and smooth. Garnish with parsley and/or cilantro from leftover bunches. Bon Appetit!
