To Chicken or not to Chicken??

Woe to the days when I frequently cooked chicken inside the oven! For I have a chicken recipe that is not merely delicious but also quick, healthy, and versatile.

Shakespeare once said,

For thou chicken mustn’t be dry. For what is thine chicken that is dry; is it hence less a chicken? To thine greater minds of understanding, though is chicken, is of lesser value to thine own soul!! Of no pleasure to be found in that of dry chicken!!

Okay, I’m kidding and weird.

But seriously, I am so done cooking chicken in the oven!! Let me give you this recipe that will make you start talking about your chicken poetically too because it’s badder than Juliet!!

Ingredients
Boneless, Skinless Chicken
One purple onion
3 Cloves of Minced Garlic
Fresh leafed spinach
Chicken Broth
Seasonings
Black Pepper
Basil
Salt
Pepper
Paprika

Directions
Cut onions and mince garlic. Grill on stove in oil for 5-6 minutes or until their soft on low-medium heat. Bring to a simmer. (This picture was before they were completely grilled)IMG_1162 (1)

Wash chicken and cut up into cubes. Pour 3/4 cup of chicken broth onto onions and garlic.

IMG_1164Put chicken on stove and let sit for about 7 minutes on medium-high heat or until one side cooked. Season chicken with above seasonings. I didn’t measure my seasonings but the picture will give you an idea of how much I used! Keep adding chicken broth if you see any of the ingredients sticking to the pan!! Fret not!IMG_1163

After both sides of the chicken are cooked add in 2 handfulls of leafed spinach. As you toss them in, you’ll see them starting to shrink so keep adding to your heart’s content!

Look at that tender chicken! I toasted some unpictured pita and threw this inside and it was delicious! It takes about 20-25 minutes to make so if you don’t have a lot of time on your hands, which who does, this is one for the books.

    I like cooking chicken lots of different ways. Oven is good because you can set a timer and do something else such as prep for the other parts of a meal. Stop top pan fried is good because it’s quick. I always buy free range chicken but never seen free range chicken broth. That’s awesome!
