Do you know what’s in your breakfast? It’s the very first thing you’re putting into your system, so it’s good to know how that food impacts your body and mind. (Who wants brain fog first thing in the morning, not I!) I used to be an AVID oatmeal eater until recently my life took a dramatic turn….
Okay, not that dramatic! But I started to cut out a lot of gluten because I noticed how it was affecting my joints (specifically these knees) and how much better I felt after eliminating it from my diet. However, that caused a HUGE strain on my breakfast routine because ya girl LOVES her some oatmeal or some Honey Bunches of Oats with Almonds in the morning. Whew, chile! So I’ve had to get creative with my breakfasts and I have a super easy egg frittata recipe to share that can help you make a convenient, healthy, grab and go breakfast because you can’t go wrong with convenient AND nutritious!
Ingredients:
-12 eggs
-Olive Oil (I like the spray kind)
-half an onion, chopped
-2 roma tomatoes
-handful of chopped spinach (not frozen)
-1lb of Sugar free Sausage
-1tsp salt
-1tsp pepper
Directions:
-Preheat oven to 400 degrees
-Brown Sausage on Stove. Be sure to break it up into small pieces and drain once browned.
-Whisk 12 eggs in a bowl
-Add all other ingredients (onion, tomato, spinach, and sausage, s&p)
-Spray Olive Oil Spray in Muffin Tins
-Pour egg/veggie mixture into muffin tins (about 3/4 full)
-Set your timer for 30 minutes and watch your favorite show until they’re done! (Or load the dishwasher!)
-They should be a little brown when they’re done. Stick a toothpick in it and make sure they’re done.
-Let cool for 5-10 minutes
Look in the mirror and call yourself Van Gough because you just created a masterpiece!! Enjoy! 🙂
